Sweet Potato Noodles with Creamy Chicken

The chicken and noodles

kale, roughly chopped

sweet potatoes, spiralized

The sauce

water

lemon, juice of

raw whole cashews

nutritional yeast

garlic powder

ground black pepper

Instructions
- Prepare chicken, kale, and herbs as noted.
- Spiralize sweet potatoes into noodles.
- Heat a large skillet over medium heat and add 1 tbsp of ghee.
- Add sweet potato noodles and cook until tender, about 6-7 minutes.
- Remove noodles and set aside.
- In a blender, combine all sauce ingredients and blend until smooth.
- In the same skillet, add remaining ghee and cubed chicken, season with salt and pepper, and cook until done, about 5-6 minutes.
- Add chopped kale and herbs, cooking until wilted, about 2-3 minutes.
- Return sweet potato noodles to the skillet, pour sauce over, and toss to mix.
- Cook for an additional 2-3 minutes until sauce is warmed.
- Serve topped with additional herbs if desired.
