Sweet Potato Noodles with Creamy Chicken

Ingredients

The chicken and noodles

  • lbs chicken breasts, cut into small cubes
  • 5 cups kale, roughly chopped
  • ¼ cup fresh chopped herbs
  • 3 medium sweet potatoes, spiralized
  • 2 tbsp ghee, divided
  • to taste salt and pepper

The sauce

  • 1 cup water
  • 1 large lemon, juice of
  • 2 cups raw whole cashews
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp ground black pepper
  • ½ tsp sea salt

Instructions

  1. Prepare chicken, kale, and herbs as noted.
  2. Spiralize sweet potatoes into noodles.
  3. Heat a large skillet over medium heat and add 1 tbsp of ghee.
  4. Add sweet potato noodles and cook until tender, about 6-7 minutes.
  5. Remove noodles and set aside.
  6. In a blender, combine all sauce ingredients and blend until smooth.
  7. In the same skillet, add remaining ghee and cubed chicken, season with salt and pepper, and cook until done, about 5-6 minutes.
  8. Add chopped kale and herbs, cooking until wilted, about 2-3 minutes.
  9. Return sweet potato noodles to the skillet, pour sauce over, and toss to mix.
  10. Cook for an additional 2-3 minutes until sauce is warmed.
  11. Serve topped with additional herbs if desired.
