Ingredients

The chicken and noodles

  • 2 lbs boneless skinless chicken breasts, cut into bite sized chunks
  • 3 cloves garlic, minced
  • 2 cups green beans, ends removed and cut into small pieces
  • 2 large sweet potatoes, spiralized into noodles
  • 3 tbsp sesame oil, divided
  • salt to taste
  • pepper to taste

The sauce

  • ¼ cup creamy peanut butter
  • ¼ cup coconut aminos
  • 1 tbsp fish sauce
  • 1 tbsp white vinegar
  • 1 juice of lemon
  • 1 tsp ground ginger

For topping

  • ¼ cup peanuts
  • 2 red fresno peppers, top and seeds removed and thinly sliced

Instructions

  1. Cut chicken into pieces and prep the garlic, green onions, and green beans.
  2. Spiralize the sweet potatoes into noodles.
  3. Heat a large skillet over medium heat and add 2 tbsp of sesame oil.
  4. Add the sweet potato noodles, season with salt and pepper, and cook until tender.
  5. Remove the noodles and set aside.
  6. In the same pan, add 1 tbsp of sesame oil, garlic, and the white parts of the green onions, and sauté.
  7. Add the chicken pieces, season with salt and pepper, and cook until almost done.
  8. Add the green beans and cook for a few more minutes.
  9. Return the sweet potato noodles to the pan.
  10. Mix the sauce ingredients together and pour over the noodles and chicken.
  11. Add the green parts of the onions and mix everything together.
  12. Remove from heat and serve with toppings if desired.
