Creamy Spinach Sweet Potato Noodles with Cashew Sauce

Instructions
- Soak the cashews in water for about 2 hours, then drain and rinse them.
- Blend the soaked cashews with ¾ cup water, salt, and garlic until smooth.
- Heat oil in a skillet over high heat, add spiralized sweet potatoes, and sauté for 6-7 minutes until tender-crisp.
- Remove from heat, add spinach, and let it wilt.
- Combine half of the herbs and half of the cashew sauce with the sweet potatoes and spinach, mixing well.
- Adjust consistency with water if needed, season with salt and pepper, drizzle with olive oil, and garnish with remaining herbs.
