Creamy Spinach Sweet Potato Noodles with Cashew Sauce

Ingredients

The cashew sauce

  • 1 cup cashews
  • ¾ cup water
  • ½ teaspoon salt
  • 1 clove garlic

The noodles

  • 4 large sweet potatoes
  • 2 cups baby spinach
  • a handful fresh basil leaves, chives, or other herbs
  • to taste salt and pepper
  • olive oil for drizzling

The cooking oil

  • 1 tablespoon oil

Instructions

  1. Soak the cashews in water for about 2 hours, then drain and rinse them.
  2. Blend the soaked cashews with ¾ cup water, salt, and garlic until smooth.
  3. Heat oil in a skillet over high heat, add spiralized sweet potatoes, and sauté for 6-7 minutes until tender-crisp.
  4. Remove from heat, add spinach, and let it wilt.
  5. Combine half of the herbs and half of the cashew sauce with the sweet potatoes and spinach, mixing well.
  6. Adjust consistency with water if needed, season with salt and pepper, drizzle with olive oil, and garnish with remaining herbs.
