Sweet Potato Noodles with Roasted Red Pepper Sauce

Instructions
- Steam chunks of one sweet potato until fork tender.
- Roast red peppers or use jarred ones.
- Spiralize the remaining sweet potatoes into noodles.
- Sauté minced garlic in olive oil until fragrant.
- Blend sautéed garlic, steamed sweet potato, roasted red pepper, water, basil, and salt until smooth.
- Sauté sweet potato noodles in olive oil until softened.
- Add peas and the red pepper sauce to the noodles and cook until desired tenderness.
- Season to taste and serve warm.
