Homemade Sweet Potato Chicken Pad Thai

The sauce

Instructions
- 1. Make the sauce by combining all sauce ingredients in a jar and shaking well or whisking in a bowl.
- 2. Chop the chicken, shallot, garlic, green onions, cilantro, and cashews.
- 3. Spiralize the sweet potatoes into noodles.
- 4. Heat a skillet over medium heat and add 2 tbsp of sesame oil, then add the sweet potato noodles and cook until tender.
- 5. Remove the noodles and add 1 tbsp of sesame oil to the same pan, sauté shallot and garlic for 1-2 minutes.
- 6. Add the chicken, season with salt and pepper, and cook until done.
- 7. Crack the eggs into the pan and scramble until cooked through.
- 8. Add the sweet potato noodles back, pour in the sauce, and mix well.
- 9. Toss in green onions, cilantro, and cashews before serving.
