Homemade Sweet Potato Chicken Pad Thai

Ingredients

The main ingredients

  • 1 lbs chicken breasts, cut into small cubes
  • 1 unit shallot, diced
  • 3 cloves garlic, minced
  • 3 unit green onions, diced
  • ¼ cup cilantro, diced
  • ½ cup cashews, chopped
  • 3 unit sweet potatoes, spiralized into noodles
  • 3 tbsp sesame oil, divided
  • 2 unit eggs
  • to taste unit salt and pepper

The sauce

  • ¼ cup cashew butter
  • ¼ cup coconut aminos
  • 1 tbsp fish sauce
  • 1 tbsp white vinegar
  • 1 unit lime, juice of

Instructions

  1. 1. Make the sauce by combining all sauce ingredients in a jar and shaking well or whisking in a bowl.
  2. 2. Chop the chicken, shallot, garlic, green onions, cilantro, and cashews.
  3. 3. Spiralize the sweet potatoes into noodles.
  4. 4. Heat a skillet over medium heat and add 2 tbsp of sesame oil, then add the sweet potato noodles and cook until tender.
  5. 5. Remove the noodles and add 1 tbsp of sesame oil to the same pan, sauté shallot and garlic for 1-2 minutes.
  6. 6. Add the chicken, season with salt and pepper, and cook until done.
  7. 7. Crack the eggs into the pan and scramble until cooked through.
  8. 8. Add the sweet potato noodles back, pour in the sauce, and mix well.
  9. 9. Toss in green onions, cilantro, and cashews before serving.
