Ingredients

  • 3 ounces unsweetened chocolate
  • 3 large egg whites
  • ¼ cup cocoa powder
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¾ cup maple syrup
  • 2 cups finely shredded unsweetened coconut

Instructions

  1. Preheat the oven to 350°F and lightly grease a cookie sheet.
  2. Melt the chocolate in a double boiler and set aside.
  3. Whisk the egg whites, then add cocoa powder, vanilla extract, and salt, mixing to combine.
  4. Stir in the melted chocolate, maple syrup, and shredded coconut until well coated.
  5. Measure out a tablespoon of the dough, shape it into a ball, and flatten it slightly on the cookie sheet. Repeat with the remaining dough, spacing them evenly.
  6. Bake for about 13 minutes until the tops are set but the insides remain soft.
  7. Cool on a wire rack and store in an airtight container.
