Instructions
- Preheat the oven to 350°F and lightly grease a cookie sheet.
- Melt the chocolate in a double boiler and set aside.
- Whisk the egg whites, then add cocoa powder, vanilla extract, and salt, mixing to combine.
- Stir in the melted chocolate, maple syrup, and shredded coconut until well coated.
- Measure out a tablespoon of the dough, shape it into a ball, and flatten it slightly on the cookie sheet. Repeat with the remaining dough, spacing them evenly.
- Bake for about 13 minutes until the tops are set but the insides remain soft.
- Cool on a wire rack and store in an airtight container.
