Harissa Carrot Salad with Avocado

Ingredients

  • ¾ lb carrots
  • 1 teaspoon cumin seeds
  • 2 cloves garlic
  • ¼ cup harissa
  • ½ teaspoon sugar
  • ½ teaspoon kosher salt
  • ¼ cup olive oil
  • 3 tablespoons lemon juice
  • ½ cup flat leaf parsley or cilantro
  • 1 whole avocado

Instructions

  1. Shred the carrots using a food processor or box grater and transfer them to a large bowl.
  2. In a small saucepan, toast the cumin seeds over medium heat until fragrant, then add garlic, harissa, sugar, salt, and olive oil, cooking for 1-2 minutes.
  3. Remove from heat and stir in lemon juice.
  4. Pour the dressing over the carrots and mix well.
  5. Add chopped herbs and mix again, then fold in the sliced avocado.
  6. Serve immediately or let it sit for an hour before serving.
