Instructions
- Shred the carrots using a food processor or box grater and transfer them to a large bowl.
- In a small saucepan, toast the cumin seeds over medium heat until fragrant, then add garlic, harissa, sugar, salt, and olive oil, cooking for 1-2 minutes.
- Remove from heat and stir in lemon juice.
- Pour the dressing over the carrots and mix well.
- Add chopped herbs and mix again, then fold in the sliced avocado.
- Serve immediately or let it sit for an hour before serving.
