Honey Harissa Carrots

Instructions
- Preheat the oven to 375°F.
- Peel the carrots and slice each into 3-inch pieces, halving or quartering as needed for uniform size.
- Toss the carrots with oil and salt, spreading them out on a sheet pan.
- Roast the carrots for 20 minutes, then remove from the oven.
- In a small bowl, whisk together the harissa, honey, cumin seeds, coriander, and cinnamon.
- Stir the carrots and toss them with the honey harissa sauce.
- Return the carrots to the oven and roast until tender and starting to blacken, about 10-15 minutes.
- Serve the carrots on a platter garnished with chopped cilantro and crumbled feta.
