Ingredients

The carrots

  • 2 pounds whole carrots

The sauce

  • 1 tablespoon canola oil
  • ¼ teaspoon kosher salt
  • 3 tablespoons harissa
  • 1 ½ tablespoons honey
  • 1 teaspoon cumin seed
  • ¼ teaspoon ground coriander
  • pinch ground cinnamon

For garnishing (optional)

  • feta
  • chopped cilantro

Instructions

  1. Preheat the oven to 375°F.
  2. Peel the carrots and slice each into 3-inch pieces, halving or quartering as needed for uniform size.
  3. Toss the carrots with oil and salt, spreading them out on a sheet pan.
  4. Roast the carrots for 20 minutes, then remove from the oven.
  5. In a small bowl, whisk together the harissa, honey, cumin seeds, coriander, and cinnamon.
  6. Stir the carrots and toss them with the honey harissa sauce.
  7. Return the carrots to the oven and roast until tender and starting to blacken, about 10-15 minutes.
  8. Serve the carrots on a platter garnished with chopped cilantro and crumbled feta.
