Ingredients

The Soup

  • 1 cup chopped onion
  • 3 cloves garlic
  • 1 pound skinless chicken breasts
  • cup tomato paste
  • 32 oz chicken broth
  • 1 tablespoon Better Than Bouillon Chicken Flavor
  • 1 cup frozen whole kernel corn
  • 1 14.5 oz canned black beans
  • 1 14.5 oz canned diced tomatoes and chilis
  • 1-2 tablespoons fresh lime juice
  • to taste tortilla strips

Homemade Taco Seasoning

  • 1 ½ tablespoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste salt and pepper

Instructions

  1. Sauté onions and garlic in the pot.
  2. Add chicken breasts, broth, Better than Bouillon, taco seasoning, and tomato paste.
  3. Close and seal the pot.
  4. Pressure cook for 10 minutes.
  5. Allow steam to naturally release for 10 minutes.
  6. Remove the chicken and shred it.
  7. Return the shredded chicken to the pot.
  8. Add corn, beans, diced tomatoes, and lime juice.
  9. Stir and cook for an additional 3-4 minutes.
  10. Serve with tortilla strips.
