Ingredients

  • 2 tablespoons pepitas (green pumpkin seeds)
  • 2 medium red beets
  • 1 handful arugula, roughly chopped
  • ΒΌ cup crumbled feta
  • to taste homemade balsamic vinaigrette

Instructions

  1. Toast the pepitas in a skillet over medium heat until fragrant, about 5 minutes, then cool.
  2. Peel the beets and slice them into thin matchsticks or rounds.
  3. In a serving bowl, combine the beets, arugula, feta, and pepitas.
  4. Drizzle with balsamic vinaigrette, toss gently, and serve.
