Carne Asada Burrito Bowls

Ingredients

Marinade

  • ½ cup orange juice
  • ½ cup soy sauce
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • ¼ teaspoon ground chipotle chili pepper
  • ½ bunch fresh cilantro

Meat

  • pounds skirt, flank, or flap steak

Rice

  • 1½ to 2 cups chicken broth
  • 1 cup long-grain or extra-long-grain rice
  • 1 lime zested and juiced
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • ¼ cup chopped cilantro

Burrito Bowls

  • 1 15-ounce can black beans
  • 1 15-ounce can corn
  • ½ cup shredded Mexican-blend cheese
  • 1 large tomato
  • ½ cup guacamole
  • ¼ cup sour cream

Instructions

  1. Prepare the marinade by mixing all marinade ingredients together.
  2. Place the meat in a bag or container and pour the marinade over it, marinate for at least 4 hours.
  3. Cook rice in chicken broth, adding lime juice, butter, and salt.
  4. After cooking, stir in lime zest and cilantro.
  5. Adjust oven rack and broil the marinated meat for 4 to 6 minutes on each side.
  6. Let the meat rest before slicing it against the grain.
  7. Assemble the burrito bowls by layering rice, meat, and toppings.
