Instructions
- Cook rice according to package instructions using chicken broth instead of water, adding lime juice, butter, and salt.
- Once cooked, stir in half the lime zest and cilantro, then divide rice into 4 bowls.
- Top each bowl with equal parts of the remaining ingredients: carnitas, beans, corn, pico de gallo, cheese, guacamole, and sour cream.
- Add a squeeze of lime and cilantro on top if desired, then serve.
