Ingredients

Cilantro Lime Rice

  • 1 ½ to 2 cups chicken broth
  • 1 cup long-grain or extra-long-grain rice
  • 1 lime zested and juiced
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • ¼ cup chopped cilantro

Carnitas Burrito Bowls

  • 2 cups cooked carnitas
  • 1 15-ounce can pinto or black beans
  • 1 15-ounce can corn
  • 1 cup pico de gallo
  • ½ cup shredded Monterey jack or Mexican blend cheese
  • ½ cup guacamole
  • ¼ cup sour cream

For Topping

  • 1 lime quartered (optional)
  • to taste cilantro chopped (optional)

Instructions

  1. Cook rice according to package instructions using chicken broth instead of water, adding lime juice, butter, and salt.
  2. Once cooked, stir in half the lime zest and cilantro, then divide rice into 4 bowls.
  3. Top each bowl with equal parts of the remaining ingredients: carnitas, beans, corn, pico de gallo, cheese, guacamole, and sour cream.
  4. Add a squeeze of lime and cilantro on top if desired, then serve.
