Ingredients

The base

  • 1 cup cooked brown rice

The toppings

  • ½ cup roasted red peppers, chopped

  • 1 wedge lime

Instructions

  1. Reheat the cooked brown rice in a bowl.
  2. Top the rice with chopped roasted red peppers.
  3. In a separate bowl, mix the black beans and salsa verde, then heat them together.
  4. Pour the heated black bean and salsa mixture over the rice and red peppers.
  5. Finish by adding diced avocado, fresh cilantro, a squeeze of lime, and red pepper flakes on top.
