Instructions
- Rinse the rice under cool running water and combine it with water and salt in a pot. Bring to a boil, then reduce to a low simmer and cook until the water is absorbed.
- In a separate pot, combine black beans, cilantro, garlic powder, chili powder, smoked paprika, salt, and cinnamon. Bring to a rapid simmer, then lower heat and simmer uncovered for 15 minutes.
- Remove the beans from heat and stir in lime juice and zest.
- Prepare the chipotle sauce by whisking together mayonnaise, cilantro, garlic, lime juice, lime zest, chipotle chili powder, and salt. Add milk to reach a sauce-like consistency.
- Divide the rice, beans, and other bowl ingredients among bowls. Garnish with additional cilantro and lime wedges.
