Ingredients

Rice

  • cup dry white rice
  • 1 and ⅓ cup water
  • ¼ teaspoon salt

Black Beans

  • 2 15 ounce cans low-salt black beans
  • ¼ cup chopped cilantro
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • pinch cinnamon
  • ¼ cup lime juice
  • zest of one lime

Chipotle Sauce

  • 1 cup vegan mayonnaise
  • ¼ cup cilantro
  • 2 cloves garlic
  • 2 tablespoons lime juice
  • zest from one lime
  • ½ teaspoon chipotle chili powder
  • ¼ teaspoon salt
  • 2-4 tablespoons milk

Bowl Ingredients

  • 2 handfuls spinach leaves
  • 1 cup fire-roasted corn
  • to taste salsa
  • to taste pickled onions
  • to taste tortilla strips
  • to taste roasted pumpkin seeds

Instructions

  1. Rinse the rice under cool running water and combine it with water and salt in a pot. Bring to a boil, then reduce to a low simmer and cook until the water is absorbed.
  2. In a separate pot, combine black beans, cilantro, garlic powder, chili powder, smoked paprika, salt, and cinnamon. Bring to a rapid simmer, then lower heat and simmer uncovered for 15 minutes.
  3. Remove the beans from heat and stir in lime juice and zest.
  4. Prepare the chipotle sauce by whisking together mayonnaise, cilantro, garlic, lime juice, lime zest, chipotle chili powder, and salt. Add milk to reach a sauce-like consistency.
  5. Divide the rice, beans, and other bowl ingredients among bowls. Garnish with additional cilantro and lime wedges.
