Instructions
- Pulse the dates in a food processor until only small bits remain.
- Add walnuts and pulse until a dough forms.
- Transfer the dough to a lined loaf pan and press into a square about ¼ inch thick.
- Freeze the dough for 5 minutes to set.
- Slice the dough into 8 rectangles and top with caramel sauce and peanuts.
- Freeze again for 15 minutes to harden.
- Melt the chocolate in a shallow bowl.
- Dip each bar in chocolate, scraping off excess, and drizzle more chocolate on top.
- Place bars on a lined baking sheet and freeze for at least 10 minutes before serving.
