Ingredients

The base

  • 18-20 pieces pitted dates
  • 1 cup raw walnuts

The toppings

  • ¼ cup vegan caramel sauce
  • ¼ cup roasted salted peanuts
  • 8 ounces bittersweet chocolate

Instructions

  1. Pulse the dates in a food processor until only small bits remain.
  2. Add walnuts and pulse until a dough forms.
  3. Transfer the dough to a lined loaf pan and press into a square about ¼ inch thick.
  4. Freeze the dough for 5 minutes to set.
  5. Slice the dough into 8 rectangles and top with caramel sauce and peanuts.
  6. Freeze again for 15 minutes to harden.
  7. Melt the chocolate in a shallow bowl.
  8. Dip each bar in chocolate, scraping off excess, and drizzle more chocolate on top.
  9. Place bars on a lined baking sheet and freeze for at least 10 minutes before serving.
