Ingredients

The base

  • 1 ¼ cups rolled oats
  • 2 tbsp coconut flour
  • ¼ cup coconut oil, melted
  • ½ tsp sea salt
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup

The caramel layer

  • 1 cup packed medjool dates, pitted
  • ¼ cup maple syrup
  • ½ cup creamy peanut butter
  • 3 tbsp coconut oil, melted

The chocolate layer

  • ½ cup dairy free dark chocolate
  • ½ cup chopped peanuts

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the base layer ingredients in a food processor and pulse until a sticky paste forms.
  3. Press the mixture into a parchment-lined baking dish.
  4. Bake for 11-13 minutes and then remove from the oven.
  5. In the same food processor, blend the caramel layer ingredients until creamy.
  6. Spread the caramel over the baked base layer.
  7. Melt the chocolate in the microwave in 30-second increments and pour it over the caramel layer.
  8. Sprinkle chopped peanuts on top.
  9. Refrigerate overnight or freeze for two hours to harden.
  10. Slice into squares and enjoy.
