Flourless Chocolate Torte

Ingredients

The torte

  • 9 ounces good-quality dark chocolate (65% or higher), finely chopped
  • 9 ounces unsalted butter
  • 1 ½ cups granulated sugar
  • 7 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon pure almond extract
  • a few tablespoons rum or bourbon (optional)

For serving (optional)

  • to taste powdered sugar
  • to taste berries
  • to taste sweetened whipped cream

Instructions

  1. Preheat the oven to 375°F and prepare a 9-inch springform pan by greasing and lining it with parchment paper.
  2. Melt the chocolate and butter together until smooth, then let cool slightly.
  3. Stir in the sugar and then add the eggs one at a time, mixing well after each addition.
  4. Add the vanilla and almond extracts, and any optional alcohol if desired.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until slightly jiggly in the center.
  6. Allow the torte to cool in the pan for 10 minutes before unmolding.
  7. Dust with powdered sugar and serve with optional toppings.
