Cashew Lemon Chicken with Broccoli

Ingredients

The chicken and coating

  • 1 pound skinless, boneless organic chicken breasts
  • ¼ cup grated parmesan cheese
  • ¾ cup raw cashews
  • 2 organic pasture raised eggs

The vegetables

  • 3 cups broccoli florets

The seasoning and oil

  • 2 tbsp Italian seasoning
  • 1 tsp sea salt
  • ¼ cup olive oil or melted coconut oil or butter

The lemons

  • 2 whole lemons

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Pulse cashews in a blender or food processor until a meal forms and transfer to a bowl.
  4. Add Italian seasoning, salt, and parmesan cheese to the cashew meal and mix well.
  5. In another bowl, combine the zest and juice of one lemon with the eggs and oil/butter, whisking together.
  6. Slice the chicken breasts to about ½ inch thick.
  7. Dip each chicken breast into the egg-lemon mixture, then into the cashew mixture, and place on the baking sheet.
  8. Slice the remaining lemon and place a piece on top of each chicken breast.
  9. Arrange broccoli florets around the chicken, spray with coconut oil, and sprinkle with parmesan cheese.
  10. Bake for 20 minutes or until the chicken is fully cooked.
