Cashew Lemon Chicken with Broccoli

Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- Pulse cashews in a blender or food processor until a meal forms and transfer to a bowl.
- Add Italian seasoning, salt, and parmesan cheese to the cashew meal and mix well.
- In another bowl, combine the zest and juice of one lemon with the eggs and oil/butter, whisking together.
- Slice the chicken breasts to about ½ inch thick.
- Dip each chicken breast into the egg-lemon mixture, then into the cashew mixture, and place on the baking sheet.
- Slice the remaining lemon and place a piece on top of each chicken breast.
- Arrange broccoli florets around the chicken, spray with coconut oil, and sprinkle with parmesan cheese.
- Bake for 20 minutes or until the chicken is fully cooked.
