Healthy Cashew Chicken

The Sauce

Instructions
- Prepare the chicken and vegetables by chopping them into bite-sized pieces.
- Whisk together all sauce ingredients in a small bowl and set aside.
- Heat 1 tbsp of olive oil in a large pan and cook the chicken until almost fully cooked, about 5 minutes.
- Remove the chicken from the pan and set aside.
- Add the remaining tbsp of olive oil to the pan and sauté the bell pepper and broccoli for 3-4 minutes.
- Add garlic and ginger to the pan and cook for an additional minute.
- Stir in the sauce and let it thicken.
- Once thickened, add the chicken, cashews, and water chestnuts back into the pan and cook for a few more minutes.
- Serve over rice or cauliflower rice, garnished with additional cashews and sesame seeds.
