Healthy Cashew Chicken

The sauce

coconut aminos

The vegetables

cauliflower, riced

broccoli florets

red bell pepper, chopped

Instructions
- Whisk together all sauce ingredients in a bowl and set aside.
- Prep the chicken and veggies as noted and set aside.
- Mix tapioca starch, salt, and pepper in a bowl. Add cubed chicken and toss to coat.
- Heat avocado oil in a large skillet over medium heat. Add chicken and cook until almost cooked through.
- Add sauce, broccoli, bell pepper, onion, and cashews to the pan. Stir to coat and reduce heat to low.
- In a separate pan, heat 1 tbsp avocado oil and cook cauliflower rice until softened, about 5 minutes. Season with salt and pepper.
- Serve the cashew chicken over the cauliflower rice.
