Healthy Cashew Chicken

Ingredients

The chicken

  • 1 ½ lbs chicken breast or thighs, cut into 1" cubes
  • ¼ cup tapioca starch
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 2 tbsp avocado oil, divided

The sauce

  • ¼ cup coconut aminos
  • ¼ cup water
  • 1 tsp sesame oil
  • 2 inches fresh ginger, minced or grated
  • 4 cloves garlic, minced

The vegetables

  • 6 cups cauliflower, riced
  • 2 cups broccoli florets
  • 1 red bell pepper, chopped
  • 4 green onions, chopped into 1" pieces
  • ¾ cup roasted cashews, unsalted

Instructions

  1. Whisk together all sauce ingredients in a bowl and set aside.
  2. Prep the chicken and veggies as noted and set aside.
  3. Mix tapioca starch, salt, and pepper in a bowl. Add cubed chicken and toss to coat.
  4. Heat avocado oil in a large skillet over medium heat. Add chicken and cook until almost cooked through.
  5. Add sauce, broccoli, bell pepper, onion, and cashews to the pan. Stir to coat and reduce heat to low.
  6. In a separate pan, heat 1 tbsp avocado oil and cook cauliflower rice until softened, about 5 minutes. Season with salt and pepper.
  7. Serve the cashew chicken over the cauliflower rice.
