Paleo Cashew Chicken

Ingredients

The chicken and vegetables

  • 1 pound boneless skinless chicken breasts
  • ½ cup tapioca flour or arrowroot flour or corn starch
  • 4 tablespoons avocado oil or olive oil
  • 1 head broccoli
  • 1 small onion
  • ¾ cup raw cashews
  • 3 tablespoons black sesame seeds
  • ¼ cup cilantro

The sauce

  • ½ cup coconut aminos or low-sodium soy sauce or tamari
  • ¼ cup chicken broth
  • ¼ cup maple syrup
  • 2 cloves garlic
  • 2 teaspoons fresh ginger
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper

Instructions

  1. Chop the chicken into small pieces and toss in the tapioca flour to coat.
  2. Heat 2 tablespoons of oil in a skillet and cook the chicken for 5-8 minutes until browned.
  3. Transfer the chicken to a plate and add the remaining oil to the skillet.
  4. Sauté the broccoli and onion for 3-4 minutes.
  5. Prepare the sauce by whisking or blending the sauce ingredients together.
  6. Return the chicken to the skillet, pour the sauce over, and cook for another 5 minutes until everything is cooked through.
  7. Top with cashews, sesame seeds, and cilantro, then serve.
