Fig Pizza with Balsamic Onions and Gorgonzola

Ingredients

The Balsamic Onions

  • 1 unit red onion, very thinly sliced into rings
  • 2 tablespoons olive oil
  • a pinch salt and pepper
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar or honey

The Pizza

  • 16 ounces pizza dough, divided into two balls
  • to taste tablespoons olive oil for brushing
  • 1-2 cups grated mozzarella cheese
  • 1 cup crumbled gorgonzola cheese or cambozola cheese, or goat cheese
  • 10 units fresh figs, quartered
  • to taste units black pepper
  • big handful baby arugula

Instructions

  1. Preheat the oven to 450°F.
  2. Let the pizza dough rest at room temperature on a floured surface for 20 minutes.
  3. In a skillet, sauté the sliced onion in olive oil over medium-high heat for 3 minutes, then lower the heat, add salt, and continue cooking for about 10 minutes until caramelized.
  4. Add balsamic vinegar, honey, and pepper to the onions, cooking for an additional 3-4 minutes until reduced.
  5. On a floured surface, stretch the dough into two thin rounds and place on parchment paper.
  6. Brush the dough with olive oil, sprinkle with mozzarella and gorgonzola cheese, top with sliced figs and balsamic onions, and add black pepper.
  7. Bake in the oven for 10-12 minutes until the crust is cooked through.
  8. Remove from the oven, sprinkle with fresh arugula, cut, and serve immediately. Optionally drizzle with balsamic glaze.
