Fig Pizza with Balsamic Onions and Gorgonzola

The Pizza

pizza dough, divided into two balls

crumbled gorgonzola cheese or cambozola cheese, or goat cheese

Instructions
- Preheat the oven to 450°F.
- Let the pizza dough rest at room temperature on a floured surface for 20 minutes.
- In a skillet, sauté the sliced onion in olive oil over medium-high heat for 3 minutes, then lower the heat, add salt, and continue cooking for about 10 minutes until caramelized.
- Add balsamic vinegar, honey, and pepper to the onions, cooking for an additional 3-4 minutes until reduced.
- On a floured surface, stretch the dough into two thin rounds and place on parchment paper.
- Brush the dough with olive oil, sprinkle with mozzarella and gorgonzola cheese, top with sliced figs and balsamic onions, and add black pepper.
- Bake in the oven for 10-12 minutes until the crust is cooked through.
- Remove from the oven, sprinkle with fresh arugula, cut, and serve immediately. Optionally drizzle with balsamic glaze.
