Instructions
- Prepare the dough at least 2 hours in advance according to the instructions on Mark Bitten's blog.
- Once the dough is ready, divide it and shape it to your desired size, oil one side and place it on the grill.
- Grill the dough for about 3 minutes, then flip it and press down to create a thinner flatbread.
- Add the sliced figs, goat cheese, parmesan, chives, and red onion on top, season with salt and pepper, and grill for another 6 to 8 minutes.
- Meanwhile, toss the mache lettuce with balsamic vinegar, olive oil, and season with salt and pepper.
- Remove the flatbreads from the grill and top with the dressed mache before serving.
