Rustic Fig and Goat Cheese Pizza

Ingredients

Dough

  • 2 cups Unbleached Flour
  • 1 cup Whole Wheat Flour
  • 1 to 1¼ cups Water
  • 1 tsp Quick Rise Yeast
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tsp Sea Salt
  • 3 tbsp Fresh Chopped Chives

Toppings

  • 12 pieces Fresh Figs, Sliced
  • ½ cup Soft Goat Cheese
  • ½ cup Fresh Shaved Parmesan Reggiano
  • ¼ cup Red Onion, VERY thinly sliced
  • ¼ cup Fresh Chives
  • 2 cups Organic Mache (Lambs Lettuce)
  • 2 tbsp Balsamic Vinegar
  • 1 tsp Extra Virgin Olive Oil
  • to taste Sea Salt
  • to taste Fresh Ground Pepper

Instructions

  1. Prepare the dough at least 2 hours in advance according to the instructions on Mark Bitten's blog.
  2. Once the dough is ready, divide it and shape it to your desired size, oil one side and place it on the grill.
  3. Grill the dough for about 3 minutes, then flip it and press down to create a thinner flatbread.
  4. Add the sliced figs, goat cheese, parmesan, chives, and red onion on top, season with salt and pepper, and grill for another 6 to 8 minutes.
  5. Meanwhile, toss the mache lettuce with balsamic vinegar, olive oil, and season with salt and pepper.
  6. Remove the flatbreads from the grill and top with the dressed mache before serving.
