Ingredients

Spicy Sesame Citrus Dressing

  • 1 tablespoon fresh orange juice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon agave nectar/maple syrup
  • 1 tablespoon gochujang chili garlic paste
  • 1 tablespoon toasted sesame seeds
  • 1 inch fresh ginger, peeled and finely grated
  • to taste sea salt
  • to taste ground black pepper
  • 5 tablespoons avocado oil

Veg and Mango Noodles

  • ½ cup shelled frozen edamame
  • 1 large zucchini
  • 1 large English cucumber
  • 1 barely ripe mango
  • ½ cup packed mixed soft herb leaves (cilantro, Thai basil, mint, or sweet basil)
  • 1 big handful sprouts of your choice (e.g., sunflower shoots)
  • extra toasted sesame seeds for garnish
  • 1 ripe avocado, peeled, pitted & diced

Instructions

  1. Combine all dressing ingredients in a sealable jar and shake well. Adjust seasoning if necessary.
  2. Soak the frozen edamame in boiling water for a few minutes, then drain.
  3. Use a julienne peeler or spiralizer to create noodle-like strands from the zucchini and cucumber, discarding the seedy inner parts.
  4. In a large bowl, combine the zucchini and cucumber noodles, drained edamame, and matchstick-cut mango.
  5. Chop the soft herbs and add them to the bowl along with the sprouts.
  6. Pour the dressing over the noodles and toss to combine.
  7. Garnish with extra sesame seeds, herbs, and diced avocado before serving.
