Instructions
- Combine all dressing ingredients in a sealable jar and shake well. Adjust seasoning if necessary.
- Soak the frozen edamame in boiling water for a few minutes, then drain.
- Use a julienne peeler or spiralizer to create noodle-like strands from the zucchini and cucumber, discarding the seedy inner parts.
- In a large bowl, combine the zucchini and cucumber noodles, drained edamame, and matchstick-cut mango.
- Chop the soft herbs and add them to the bowl along with the sprouts.
- Pour the dressing over the noodles and toss to combine.
- Garnish with extra sesame seeds, herbs, and diced avocado before serving.
