Ingredients

  • 1 cup full fat coconut milk
  • ½ cup pumpkin purée
  • ¼ cup salted butter, ghee, or coconut oil, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¼ cup maple sugar
  • 1 ½ cups King Arthur cup for cup gluten-free flour
  • 1 Tbsp pumpkin pie spice
  • 3 tsp double acting aluminum-free baking powder
  • ½ tsp fine sea salt
  • as needed none non-stick spray or oil for the waffle iron

Instructions

  1. 1. Mix wet ingredients (pumpkin puree, coconut milk, melted butter or oil, eggs, vanilla, and maple sugar) in a large measuring cup.
  2. 2. Whisk dry ingredients (gluten-free flour, pumpkin pie spice, baking powder, and salt) in a separate bowl.
  3. 3. Combine wet and dry mixtures until well mixed; the batter should be thick.
  4. 4. Preheat the waffle iron according to the manufacturer's instructions.
  5. 5. Grease the waffle iron and pour batter onto it, cooking according to the manufacturer's instructions.
  6. 6. Transfer cooked waffles to a cooling rack to keep them crispy, and keep warm in the oven if necessary.
