Instructions
- 1. Mix wet ingredients (pumpkin puree, coconut milk, melted butter or oil, eggs, vanilla, and maple sugar) in a large measuring cup.
- 2. Whisk dry ingredients (gluten-free flour, pumpkin pie spice, baking powder, and salt) in a separate bowl.
- 3. Combine wet and dry mixtures until well mixed; the batter should be thick.
- 4. Preheat the waffle iron according to the manufacturer's instructions.
- 5. Grease the waffle iron and pour batter onto it, cooking according to the manufacturer's instructions.
- 6. Transfer cooked waffles to a cooling rack to keep them crispy, and keep warm in the oven if necessary.
