The Broccoli Rice

Instructions
- Blend the marinade ingredients (mandarin orange slices, chili sauce, lime juice, orange marmalade, salt, pepper, garlic, onion, rice wine vinegar) until mixed well.
- Add olive oil and tamari or soy sauce to the marinade and blend again until creamy.
- Marinate the chicken in a bowl or bag with the marinade for at least 20 minutes or overnight.
- Preheat the oven to 425°F or prepare the grill.
- Bake the chicken for 20-25 minutes or grill it, flipping halfway through until cooked through.
- Let the chicken rest for 5 minutes before slicing.
- Steam the blitzed broccoli with sesame oil in the microwave for 45 seconds, then season with sesame seeds, salt, and pepper.
- To serve, divide the broccoli rice into bowls, add the chicken, garnish with orange slices, and drizzle with reserved marinade.
