Orange Chicken and Broccoli Rice Bowls

Ingredients

The Marinade

  • ½ cup peeled mandarin orange slices
  • 2 tablespoons chili garlic sauce or Sriracha
  • 1 tablespoon lime juice
  • 3 tablespoons orange marmalade
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 cloves garlic, pressed or minced
  • cup chopped red onion or shallot
  • 3 tablespoons rice wine vinegar
  • ¼ cup avocado oil or olive oil
  • 3 tablespoons tamari or soy sauce
  • 1 pound boneless, skinless chicken breasts

The Broccoli Rice

  • 1 pound broccoli florets
  • 1-3 tablespoons sesame oil
  • 2 tablespoons toasted sesame seeds

Toppings

  • to taste fresh or grilled mandarin orange slices
  • to taste crushed red chili flakes
  • to taste fresh basil or cilantro
  • to taste tamari or soy sauce

Instructions

  1. Blend the marinade ingredients (mandarin orange slices, chili sauce, lime juice, orange marmalade, salt, pepper, garlic, onion, rice wine vinegar) until mixed well.
  2. Add olive oil and tamari or soy sauce to the marinade and blend again until creamy.
  3. Marinate the chicken in a bowl or bag with the marinade for at least 20 minutes or overnight.
  4. Preheat the oven to 425°F or prepare the grill.
  5. Bake the chicken for 20-25 minutes or grill it, flipping halfway through until cooked through.
  6. Let the chicken rest for 5 minutes before slicing.
  7. Steam the blitzed broccoli with sesame oil in the microwave for 45 seconds, then season with sesame seeds, salt, and pepper.
  8. To serve, divide the broccoli rice into bowls, add the chicken, garnish with orange slices, and drizzle with reserved marinade.
