Ingredients

The sauce

  • ¼ cup orange juice
  • 3 tablespoons soy sauce or coconut aminos
  • 3 tablespoons brown sugar or Brown Swerve
  • 2 cloves garlic, minced
  • 1 1-inch piece ginger, grated
  • ½ tablespoon cornstarch

The chicken

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons avocado oil

Optional toppings and sides

  • green onions optional for topping
  • sesame seeds optional for topping
  • white rice or cauliflower rice optional for serving

Instructions

  1. Whisk together the orange juice, soy sauce, brown sugar, garlic, ginger, and cornstarch in a small bowl until smooth.
  2. Cut the chicken breasts into bite-sized pieces.
  3. Heat avocado oil in a large skillet over medium-high heat.
  4. Add the chicken to the skillet in batches, cooking until browned on both sides, about 1-2 minutes per side.
  5. Remove the browned chicken and repeat until all pieces are cooked.
  6. Return all chicken to the skillet and pour the sauce over it, stirring to combine.
  7. When the sauce begins to bubble, reduce the heat to low and simmer until the sauce thickens.
  8. Serve the chicken over white rice or cauliflower rice, garnished with green onions and sesame seeds if desired.
