Mandarin Orange Salad

Ingredients

The salad

  • 1 lb boneless skinless chicken breast
  • 1 cup sliced almonds
  • 10 oz baby spinach
  • 2 cups snow peas
  • cups matchstick carrots
  • 1 medium red bell pepper
  • cans mandarin oranges
  • ½ cup cilantro
  • to taste black and white sesame seeds

The wonton strips

  • 12 pieces wonton wrappers
  • to taste cinnamon
  • for frying amount vegetable oil

The dressing

  • ¼ cup olive oil
  • ¼ cup canola oil
  • 1 tsp lemon zest
  • Tbsp fresh lemon juice
  • 2 Tbsp honey
  • 2 Tbsp peeled and grated ginger
  • 1 clove garlic
  • 1 tsp Dijon mustard
  • ¼ - ½ tsp salt

Instructions

  1. Blend the dressing ingredients until well combined and store in the refrigerator.
  2. Slice wonton wrappers and fry in oil until crispy, then sprinkle with cinnamon.
  3. Combine all salad ingredients in a large bowl and toss.
  4. Drizzle with dressing, toss gently, and top with wonton strips and sesame seeds before serving.
