Instructions
- Prepare the dressing by whisking together all dressing ingredients in a small bowl or jar.
- Slice the red onion thinly and soak in ice water for a few minutes.
- Drain the mandarin oranges and slice the avocado.
- Chop the rotisserie chicken breast.
- Assemble the salads by placing salad greens in bowls and topping with mandarin oranges, chicken, avocado, and red onion.
- Whisk the dressing again and drizzle over the salads, starting with a small amount.
