Ingredients

Simple Sesame Dressing

  • 2 Tbsp light or neutral oil
  • 1 Tbsp rice vinegar
  • 4 tsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 Tbsp brown sugar
  • 1 tsp grated fresh ginger
  • ½ Tbsp sesame seeds

Salad

  • 6 cups salad greens
  • 11 oz canned mandarin oranges
  • 1 piece rotisserie chicken breast
  • ¼ cup sliced almonds
  • ¼ small red onion
  • ½ piece avocado

Instructions

  1. Prepare the dressing by whisking together all dressing ingredients in a small bowl or jar.
  2. Slice the red onion thinly and soak in ice water for a few minutes.
  3. Drain the mandarin oranges and slice the avocado.
  4. Chop the rotisserie chicken breast.
  5. Assemble the salads by placing salad greens in bowls and topping with mandarin oranges, chicken, avocado, and red onion.
  6. Whisk the dressing again and drizzle over the salads, starting with a small amount.
