Cilantro Lime Shrimp Bowls

The sauce

mayo

The rest of the bowls

cauliflower, riced

avocado oil (or bacon grease or lard)

coleslaw mix (green + purple cabbage + carrots)

jalapeño, sliced into thin rounds (optional)
Instructions
- Peel and devein shrimp if necessary and pat dry.
- Chop cilantro and zest and juice lime, then set aside and prepare the sauce.
- Rice cauliflower if not using pre-riced.
- Heat a skillet and add 1 tbsp of avocado oil, then cook cauliflower rice for about 5 minutes until tender, seasoning with salt and pepper.
- In another skillet, heat 1 tbsp of avocado oil, add shrimp, and cook for 2-3 minutes until pink and cooked through.
- Add avocado oil, chopped cilantro, lime zest and juice, and season with salt and pepper to the shrimp, tossing to coat.
- Assemble the bowls starting with cauliflower rice, then add coleslaw mix, shrimp, cilantro, avocado slices, and optional garnishes.
- Drizzle sauce over the bowls and enjoy.
