Cilantro Lime Shrimp Bowls

Ingredients

The shrimp

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp avocado oil, divided
  • ½ cup cilantro, finely chopped
  • 1 unit lime, juice and zest
  • to taste unit sea salt and pepper

The sauce

  • ¼ cup mayo
  • 1 tbsp hot sauce

The rest of the bowls

  • 4 cups cauliflower, riced
  • 1 tbsp avocado oil (or bacon grease or lard)
  • to taste unit sea salt and pepper
  • 1 cup coleslaw mix (green + purple cabbage + carrots)
  • 2 unit avocados, sliced
  • optional unit lime wedges
  • 1 unit jalapeño, sliced into thin rounds (optional)

Instructions

  1. Peel and devein shrimp if necessary and pat dry.
  2. Chop cilantro and zest and juice lime, then set aside and prepare the sauce.
  3. Rice cauliflower if not using pre-riced.
  4. Heat a skillet and add 1 tbsp of avocado oil, then cook cauliflower rice for about 5 minutes until tender, seasoning with salt and pepper.
  5. In another skillet, heat 1 tbsp of avocado oil, add shrimp, and cook for 2-3 minutes until pink and cooked through.
  6. Add avocado oil, chopped cilantro, lime zest and juice, and season with salt and pepper to the shrimp, tossing to coat.
  7. Assemble the bowls starting with cauliflower rice, then add coleslaw mix, shrimp, cilantro, avocado slices, and optional garnishes.
  8. Drizzle sauce over the bowls and enjoy.
