Chipotle Lime Shrimp Bowls

Ingredients

The shrimp

  • 1 pound large shrimp, deveined and peeled
  • 3 tablespoons canola oil
  • 3 tablespoons fresh lime juice
  • 1 to 2 pieces chipotle peppers in adobo sauce, finely minced
  • 1 teaspoon adobo sauce
  • 2 cloves garlic, pressed
  • 2 teaspoons honey
  • ¾ teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon cayenne pepper

The bowls

  • 4 cups cooked brown rice
  • 1 15.5 ounce can black beans, drained and warmed
  • 2 cups cherry tomatoes, sliced
  • 1 large avocado, pitted and chopped
  • 4 pieces green onions, chopped
  • ¼ cup red onion, chopped
  • to taste fresh cilantro
  • to taste lime wedges

Instructions

  1. Combine shrimp with oil, lime juice, chipotle peppers, adobo sauce, garlic, honey, salt, cumin, and cayenne in a bowl and let marinate for 15 minutes.
  2. Heat a skillet over medium-high heat and add remaining oil.
  3. Cook the shrimp for 1-2 minutes on each side until pink and cooked through.
  4. Assemble bowls with brown rice, black beans, tomatoes, avocado, green onions, red onion, and cilantro.
  5. Serve with lime wedges and additional adobo sauce if desired.
