Chipotle Lime Shrimp

Ingredients

The shrimp

  • 1 lb shrimp, shelled, deveined and tail-on

The sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • tablespoons lime juice
  • ½ teaspoon Chipotle Chili Pepper Powder
  • ¼ teaspoon salt
  • 1 tablespoon parsley or cilantro, chopped
  • to taste fresh lime wedges

Instructions

  1. Rinse the shrimp under cold water, then drain and pat dry.
  2. Heat a skillet over medium heat and add olive oil.
  3. Once the oil is hot, add the minced garlic and sauté briefly.
  4. Add the shrimp to the skillet, stirring and cooking them.
  5. Incorporate honey, lime juice, chipotle chili powder, and salt, stirring well.
  6. Continue stirring to ensure both sides of the shrimp are cooked evenly.
  7. Add chopped parsley or cilantro and stir to combine.
  8. Turn off the heat and serve immediately with fresh lime wedges.
