Chili Lime Shrimp

Ingredients

The shrimp

  • 1 lb shrimp, peeled and deveined, tail-on

The marinade

  • ¼ cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro leaves, or parsley leaves, chopped finely
  • 2 tablespoons Thai sweet chili sauce
  • 2 cloves garlic, chopped finely
  • ½ tablespoon honey
  • 1 pinch salt

Instructions

  1. Soak the bamboo skewers in cold water.
  2. Rinse the shrimp and pat them dry with paper towels.
  3. In a bowl, whisk together all the marinade ingredients.
  4. Add the shrimp to the marinade and toss to coat evenly.
  5. Marinate the shrimp for 30 minutes.
  6. Fire up the grill and cook the shrimp until fully cooked and slightly charred.
  7. Serve immediately.
