Easy Chili Lime Shrimp

Ingredients

The shrimp

  • 1 pound shrimp, peeled and deveined
  • 1 tbsp avocado oil (or other cooking oil of choice)

The sauce

  • 1 lime juice of
  • 3 tbsp olive oil
  • 3 tbsp fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes

Optional creamy avocado topping

  • ½ avocado pitted and peeled
  • cup cilantro
  • 2 limes juice of
  • ¼ cup olive oil
  • 1 tsp chili powder
  • ½ tsp sea salt

Instructions

  1. Whisk together the sauce ingredients in a small bowl.
  2. Place the shrimp in a bowl and pour the sauce over them, tossing to coat.
  3. If making the creamy avocado topping, blend all its ingredients until smooth and refrigerate until serving.
  4. Heat a large skillet over medium heat and add the avocado oil.
  5. Add the shrimp and sauce to the skillet, cooking for 2-3 minutes per side until the shrimp is pink and cooked through.
  6. Serve immediately, optionally drizzling with leftover sauce and creamy avocado topping.
