Instructions
- Soak the wood skewers in water for about 10 minutes.
- In a medium bowl, mix together the olive oil, lime juice, lime zest, cilantro, and garlic.
- Toss the shrimp in the lime/cilantro mixture and let them marinate for about 30 minutes.
- Put the shrimp on the wood skewers, packing them tightly.
- Grill the skewers on a heated grill for a few minutes on each side until cooked through.
- Serve with rice and black bean salsa if desired.
