Grilled Cilantro Lime Shrimp Skewers

Ingredients

The skewers and shrimp

  • Wood skewers Wood skewers
  • 1 pound Shrimp, peeled and deveined

The marinade

  • 1 tablespoon Olive oil
  • ¼ cup Fresh lime juice
  • 1 tablespoon Lime zest
  • ¼ cup Cilantro, chopped
  • 2 cloves Garlic, minced

Instructions

  1. Soak the wood skewers in water for about 10 minutes.
  2. In a medium bowl, mix together the olive oil, lime juice, lime zest, cilantro, and garlic.
  3. Toss the shrimp in the lime/cilantro mixture and let them marinate for about 30 minutes.
  4. Put the shrimp on the wood skewers, packing them tightly.
  5. Grill the skewers on a heated grill for a few minutes on each side until cooked through.
  6. Serve with rice and black bean salsa if desired.
