Grilled Cilantro Lime Shrimp Kebabs

Ingredients

The shrimp

  • 32 pieces jumbo raw shrimp, peeled and deveined

The seasoning

  • 3 cloves garlic, crushed
  • 1 teaspoon kosher salt
  • teaspoons ground cumin
  • ¼ cup chopped fresh cilantro, divided

The kebabs

  • 24 slices thinly sliced limes (optional)
  • 1 lime cut into wedges
  • 16 pieces bamboo skewers, soaked in water for 1 hour
  • as needed spray olive oil cooking spray

Instructions

  1. Preheat the grill to medium heat and spray the grates with oil.
  2. In a medium bowl, season the shrimp with garlic, cumin, salt, and half of the cilantro.
  3. Thread the shrimp and folded lime slices onto 8 pairs of parallel skewers, alternating as you go.
  4. Grill the kebabs, turning occasionally, until the shrimp are opaque, about 1 to 2 minutes on each side.
  5. Top with the remaining cilantro and fresh squeezed lime juice before serving.
