Grilled Cilantro Lime Shrimp in Avocado Boat

Instructions
- Preheat the grill to medium-high heat (about 375-400°F).
- In a medium bowl, combine shrimp, cilantro, cumin, smoked paprika, minced garlic, lime zest, salt, and olive oil, and toss to coat.
- Spray each avocado half with cooking spray.
- Spray grill grates with cooking spray or wipe with an olive oil-soaked rag.
- Place shrimp directly on the grill and grill each side for 3 minutes.
- Grill avocado halves, flesh side down, for 3-4 minutes.
- Remove shrimp and avocado from the grill.
- Serve shrimp inside the avocado halves and top with diced cherry tomatoes.
