Ingredients

The shrimp mixture

  • 1 lb shrimp, peeled and deveined
  • ¼ cup chopped cilantro
  • ½ teaspoon cumin
  • ¼ teaspoon smoked paprika
  • 1 clove garlic, minced
  • 1 large lime, zest
  • to taste salt
  • 1 tablespoon olive oil

The avocado

  • 3 avocados, halved and seeds removed
  • to taste cooking spray

The topping

  • cup diced cherry tomatoes

Instructions

  1. Preheat the grill to medium-high heat (about 375-400°F).
  2. In a medium bowl, combine shrimp, cilantro, cumin, smoked paprika, minced garlic, lime zest, salt, and olive oil, and toss to coat.
  3. Spray each avocado half with cooking spray.
  4. Spray grill grates with cooking spray or wipe with an olive oil-soaked rag.
  5. Place shrimp directly on the grill and grill each side for 3 minutes.
  6. Grill avocado halves, flesh side down, for 3-4 minutes.
  7. Remove shrimp and avocado from the grill.
  8. Serve shrimp inside the avocado halves and top with diced cherry tomatoes.
