Grilled Shrimp with Cilantro Garlic Butter

Ingredients

The shrimp and marinade

  • 1 lb shrimp, peeled
  • 3 Tbsp avocado oil
  • 2 limes juiced (~4.5 Tbsp lime juice)
  • 1 tsp sea salt

The butter mixture

  • 2 Tbsp butter or ghee, melted
  • 1 Tbsp finely chopped cilantro
  • 4 cloves garlic, pressed or minced
  • as needed none lime wedges for garnish

Instructions

  1. Soak bamboo skewers for a few hours to prevent burning on the grill.
  2. De-vein shrimp if desired.
  3. Skewer shrimp onto skewers and place in a shallow pan.
  4. Mix together avocado oil, lime juice, and salt in a small bowl, then pour over the shrimp.
  5. Let the shrimp marinate for 20-30 minutes at room temperature.
  6. Mix butter, cilantro, and garlic together in a small bowl.
  7. Grill the shrimp skewers over medium/high heat for 2 minutes per side until they turn pink.
  8. Remove the shrimp skewers to a plate and immediately brush with the butter mixture.
  9. Serve immediately.
