Grilled Cilantro, Garlic & Lime Shrimp Kabobs

Ingredients

The shrimp

  • 1 lb large shrimp, peeled and deveined

The shrimp marinade

  • 3 cloves garlic, minced
  • 1 cup cilantro, diced
  • 1 tbsp chili powder
  • 1 lime juice of (about 1-2 tbsp)
  • cup coconut aminos

Instructions

  1. 1. Start the grill and prepare it for high heat.
  2. 2. Rinse the shrimp with cold water and set aside on a paper towel lined plate to dry.
  3. 3. In a medium bowl, combine garlic, cilantro, chili powder, and lime juice, mixing until a thick consistency is achieved.
  4. 4. Add enough coconut aminos to make a paste that can coat the shrimp.
  5. 5. Add the shrimp to the marinade and mix to coat.
  6. 6. Thread the shrimp onto kabobs and grill immediately or refrigerate to marinate for up to an hour.
  7. 7. Grill the shrimp for about 3 minutes on each side until cooked through, then remove and serve.
