Ingredients

The shrimp and marinade

  • 2 pounds large shrimp, peeled and deveined
  • 2 teaspoons fresh thyme
  • 1-2 teaspoons fresh oregano (or ½ teaspoon dried)
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon cumin
  • 1 tablespoon garlic, minced (about 3 medium cloves)
  • 1 teaspoon pepper flakes
  • ½ teaspoon Italian seasoning
  • 3-4 tablespoons olive oil
  • 3-4 tablespoons lemon juice
  • to taste salt

The vegetables (optional)

  • 2 pieces bell pepper, cut in large chunks
  • 1 piece red onion, in large slices
  • 1 piece zucchini, in large slices
  • 1 piece squash, in large slices

Instructions

  1. Soak skewers in water for at least 20 minutes to prevent burns.
  2. Heat the gas grill to medium-high heat or prepare a grill pan with oil.
  3. In a bowl, combine thyme, oregano, black pepper, cumin, garlic, pepper flakes, Italian seasoning, olive oil, and lemon juice to make the marinade.
  4. Season shrimp with salt and marinate them in the mixture for 30 minutes to 1 hour.
  5. Rub some marinade on the vegetables and season with salt.
  6. Thread shrimp and vegetables onto the skewers, alternating between them.
  7. Grill the skewers for 2-3 minutes per side until shrimp are cooked through and vegetables are tender.
  8. Serve warm with salad, rice, or creamy orzo.
