Grilled Shrimp Kabobs

Instructions
- Soak skewers in water for at least 20 minutes to prevent burns.
- Heat the gas grill to medium-high heat or prepare a grill pan with oil.
- In a bowl, combine thyme, oregano, black pepper, cumin, garlic, pepper flakes, Italian seasoning, olive oil, and lemon juice to make the marinade.
- Season shrimp with salt and marinate them in the mixture for 30 minutes to 1 hour.
- Rub some marinade on the vegetables and season with salt.
- Thread shrimp and vegetables onto the skewers, alternating between them.
- Grill the skewers for 2-3 minutes per side until shrimp are cooked through and vegetables are tender.
- Serve warm with salad, rice, or creamy orzo.
