Ingredients

  • 1 pound large shrimp, peeled and deveined
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 2 teaspoons minced garlic
  • 1 tablespoon chopped parsley
  • to taste lemon wedges for serving

Instructions

  1. Combine olive oil, lemon juice, salt, pepper, Italian seasoning, and garlic in a resealable plastic bag and shake to mix.
  2. Add shrimp to the bag, seal, and toss to coat evenly with the marinade.
  3. Marinate the shrimp for at least 15 minutes and up to 2 hours.
  4. Thread the marinated shrimp onto skewers.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Grill the skewers for 2-3 minutes on each side until the shrimp are pink and opaque.
  7. For broiling, preheat the broiler, place skewers on a greased sheet pan, and broil for 2-3 minutes on each side.
  8. Sprinkle with parsley and serve with lemon wedges.
