Instructions
- Combine olive oil, lemon juice, salt, pepper, Italian seasoning, and garlic in a resealable plastic bag and shake to mix.
- Add shrimp to the bag, seal, and toss to coat evenly with the marinade.
- Marinate the shrimp for at least 15 minutes and up to 2 hours.
- Thread the marinated shrimp onto skewers.
- Preheat the grill or grill pan over medium-high heat.
- Grill the skewers for 2-3 minutes on each side until the shrimp are pink and opaque.
- For broiling, preheat the broiler, place skewers on a greased sheet pan, and broil for 2-3 minutes on each side.
- Sprinkle with parsley and serve with lemon wedges.
