Lemon Garlic Shrimp Skewers

Ingredients

The shrimp

  • 48 pieces large wild caught shrimp, peeled and deveined

The marinade

  • 2-3 tbsp extra-virgin olive oil
  • 2-3 tbsp finely chopped fresh parsley
  • 3 cloves garlic, minced
  • 1 unit lemon, grated zest
  • to taste unit salt
  • to taste unit pepper

The skewers

  • 8 pieces wooden skewers

Instructions

  1. Combine the shrimp, olive oil, parsley, garlic, lemon zest, salt, and pepper in a non-reactive container and stir gently to coat the shrimp.
  2. Cover the container with plastic wrap and refrigerate to marinate for 1 to 4 hours.
  3. Soak the wooden skewers in cold water for at least 30 minutes before grilling.
  4. Preheat the grill to high heat and thread the marinated shrimp onto the soaked skewers.
  5. Grill the skewers for about 2 minutes on each side, brushing with leftover marinade.
  6. Remove from the grill, garnish with parsley and lemon slices, and serve immediately.
