Shrimp Scampi Skewers

Ingredients

The skewers

  • 1 pound raw large or jumbo shrimp, peeled and deveined
  • 3 pieces lemons, sliced into thin half moons
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly-ground black pepper
  • teaspoon crushed red pepper flakes
  • to taste garlic parsley butter

The garlic parsley butter

  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • ¼ cup dry white wine
  • ¼ cup finely chopped fresh parsley

Instructions

  1. Prepare the garlic parsley butter by melting butter in a pan, adding garlic, and cooking until fragrant.
  2. Stir in white wine and chopped parsley, then set aside.
  3. Heat a grill or grill pan over medium heat.
  4. Thread shrimp and lemon slices onto skewers, and season with salt, pepper, and red pepper flakes.
  5. Grill the skewers for 3-4 minutes on each side until shrimp are pink and opaque.
  6. Remove from grill and brush with garlic parsley butter, squeezing grilled lemons over the shrimp.
  7. Serve immediately.
