Rosemary Lemon Shrimp Skewers

Ingredients

The shrimp

  • 1 lb jumbo or extra jumbo size shrimp

The marinade

  • 1–2 tbsp olive oil
  • 7–8 stems rosemary
  • ¼ cup rosemary needles
  • 8 pieces lemons
  • 3 cloves garlic
  • 1 tbsp course smoked sea salt
  • ½ tbsp fresh ground pepper

Instructions

  1. Remove rosemary needles from the stems and set aside.
  2. Combine rosemary needles, olive oil, garlic, and lemon zest in a bowl and blend to create a marinade.
  3. Marinate the shrimp in the mixture for 30 minutes.
  4. Prepare the grill while the shrimp is marinating.
  5. Slice the lemons thinly.
  6. Thread the shrimp onto rosemary skewers, alternating with lemon slices.
  7. Prepare the grill for cooking and add rosemary sprigs to the coals for flavor.
  8. Grill the shrimp for a few minutes on each side until pink, being careful not to overcook.
  9. Grill the remaining lemon slices until charred for serving.
  10. Serve the grilled shrimp with the charred lemons.
