Ingredients

Jerk Seasoning

  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground allspice
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon black pepper
  • 2 teaspoons cayenne pepper

Shrimp Kabobs

  • 1 pound large shrimp, peeled and deveined
  • 2 cups pineapple chunks
  • 1 red bell pepper cut into 1 inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon chopped parsley

Instructions

  1. Combine all the jerk seasoning spices and store for later use.
  2. Heat a grill or grill pan to medium high.
  3. Thread the shrimp, pineapple, and red pepper onto skewers.
  4. Brush the skewers with olive oil and sprinkle jerk seasoning generously on both sides.
  5. Grill the skewers for 3-4 minutes per side until the shrimp are pink and opaque.
  6. Sprinkle with parsley and serve.
  7. For broiling, place skewers on a baking sheet and broil for 3-4 minutes per side.
