Ingredients

The shrimp and marinade

  • 2 pounds large shrimp, peeled and deveined
  • 1 teaspoon thyme
  • 1 tablespoon garlic, minced
  • 2 teaspoons jerk seasoning
  • 3-4 tablespoons olive oil
  • 3-4 tablespoons lemon juice
  • 1-2 teaspoons hot sauce
  • 1-2 teaspoons soy sauce
  • to taste salt

Optional vegetables

  • as needed vegetable chunks

Instructions

  1. Soak the skewers in water for at least 20 minutes to prevent burning.
  2. Heat the grill to medium-high or lightly oil a grill pan.
  3. In a bowl, combine thyme, garlic, jerk seasoning, olive oil, lemon juice, hot sauce, and soy sauce.
  4. Season the shrimp with salt and marinate them in the jerk mixture.
  5. Rub some marinade on the vegetables and season with salt.
  6. Thread the shrimp and vegetables onto the skewers.
  7. Grill the skewers for 2-3 minutes per side until fully cooked.
  8. Serve warm with salad, rice, or creamy orzo.
