Grilled Shrimp Skewers with Pineapple

Ingredients

The skewers

  • 1 pound large raw, peeled and deveined shrimp
  • 1 pound pineapple chunks
  • 3 tablespoons olive oil
  • 1 lime lime juice and zest
  • 1 orange orange juice
  • 1 tablespoon honey or maple syrup
  • 3 cloves garlic
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon coriander
  • ½ teaspoon chili powder
  • ½ teaspoon chipotle powder

Garnish

  • to taste limes
  • to taste cilantro
  • to taste Jicama Mango Slaw

Instructions

  1. Soak wooden skewers if using.
  2. Place shrimp in a bowl or ziplock bag.
  3. Blend marinade ingredients until smooth.
  4. Pour marinade over shrimp and marinate for 20-30 minutes.
  5. Preheat grill to medium.
  6. Drain marinade into a saucepan and simmer until thickened.
  7. Skewer shrimp and pineapple, alternating them.
  8. Grease the grill well and lay down the skewers.
  9. Grill each side for about 3 minutes until shrimp is cooked.
  10. Serve on a platter drizzled with reduced marinade or lime.
