Grilled Shrimp Skewers with Pineapple

Jicama Mango Slaw
Instructions
- Soak wooden skewers if using.
- Place shrimp in a bowl or ziplock bag.
- Blend marinade ingredients until smooth.
- Pour marinade over shrimp and marinate for 20-30 minutes.
- Preheat grill to medium.
- Drain marinade into a saucepan and simmer until thickened.
- Skewer shrimp and pineapple, alternating them.
- Grease the grill well and lay down the skewers.
- Grill each side for about 3 minutes until shrimp is cooked.
- Serve on a platter drizzled with reduced marinade or lime.
