Ingredients

The filling

  • 3 cups chopped butternut squash, steamed or roasted
  • 1 cup cooked quinoa
  • 1 cup rinsed black beans
  • to taste chopped scallions

The wrap

  • 4 pieces whole wheat wraps
  • to taste white crumbly cheese (feta, gorgonzola, cotija, etc.)

Instructions

  1. Mix the chopped butternut squash, quinoa, black beans, and scallions together; season to taste.
  2. Place 1 cup of the filling on a wrap, sprinkle with cheese, and fold it up.
  3. Grill the wrap on a griddle or panini press until heated through.
