Spicy Mexican Quinoa Wrap

Ingredients

The filling

  • ½ cup organic silken tofu or Greek Yogurt
  • ½ cup salsa
  • 2 tablespoons nutritional yeast (optional)
  • 1 chipotle chili from a can of chipotle chili peppers in adobo sauce
  • 2 cloves garlic (minced)
  • 1 cup cooked quinoa
  • 1 cup organic corn (thawed)
  • 1 cup cooked black beans
  • ¼ cup fresh cilantro (chopped)
  • 1 each avocado (diced)
  • 1 each tomato (diced)

The wraps

  • 4 large gluten free wraps

Instructions

  1. Blend the tofu, salsa, nutritional yeast, chipotle chili, and garlic until smooth.
  2. In a bowl, mix the quinoa, corn, black beans, and cilantro, then add ¼ cup of the tofu mixture and toss.
  3. Place ¼ of the quinoa mixture, avocado, and tomato onto each tortilla and drizzle with additional sauce.
  4. Roll up the wraps and serve with extra sauce on the side.
  5. For warm wraps, heat oil in a skillet and cook until golden brown, or use a sandwich press.
