Instructions
- Preheat the oven to 325°F and prepare a cookie sheet.
- Mix flaxseed meal and water in a small bowl to create a flax egg.
- In a medium bowl, combine soy flour, amaranth, pumpkin pie spice, cornstarch, baking powder, baking soda, salt, and sweetener.
- In another bowl, mix pumpkin puree, honey, coconut oil, milk, and vanilla extract.
- Add the flax egg to the wet mixture and stir well.
- Combine the wet and dry ingredients, mixing until combined.
- Scoop the dough onto the prepared cookie sheet.
- Bake for 9-10 minutes until firm on the outside but still soft inside.
- Allow cookies to cool before serving.
